A simple, no-cook breakfast that combines rolled oats, peanut butter, banana, and chia seeds into a creamy, pudding-like texture. Perfect for meal prep and naturally sweetened with ripe bananas.

  • ½ cup (120ml) milk of choice (whole milk, oat milk, or almond milk)
  • ¼ cup (60g) plain Greek yogurt
  • 2 tablespoons (32g) creamy peanut butter
  • 1 medium ripe banana, mashed (about ½ cup, 120g)
  • 1 tablespoon (12g) chia seeds
  • ½ teaspoon vanilla extract
  • Pinch of salt (about ⅛ teaspoon)
  • 12 teaspoons maple syrup or honey (optional, for extra sweetness)

Instructions

  1. Mash the banana: Peel the ripe banana and place it in the bottom of a mason jar. Use a fork to mash it thoroughly until smooth with only tiny lumps remaining.
  2. Add the peanut butter: Spoon 2 tablespoons of creamy peanut butter into the jar on top of the mashed banana. If thick or cold, warm in the microwave for 10-15 seconds first. Blend the peanut butter and banana together with a fork until they form a uniform, creamy paste.
  3. Pour in the milk: Add ½ cup of your chosen milk. Give everything a quick stir with the fork to begin incorporating the wet ingredients.
  4. Add the yogurt and vanilla: Spoon in ¼ cup of plain Greek yogurt and add ½ teaspoon of vanilla extract. Stir until the yogurt is fully incorporated.
  5. Mix in the dry ingredients: Add ½ cup of rolled oats, 1 tablespoon of chia seeds, and a tiny pinch of salt. Stir everything together thoroughly, scraping the bottom and sides of the jar to ensure no dry pockets remain.
  6. Taste and adjust: Give the mixture a quick taste. If you’d like it sweeter, add 1-2 teaspoons of maple syrup or honey and stir again. If the peanut butter flavor isn’t strong enough, add another half tablespoon.
  7. Seal and refrigerate: Put the lid on the jar and refrigerate for at least 6 hours, but preferably overnight (8-12 hours).
  8. Serve and enjoy: In the morning, remove the jar from the refrigerator. Give the oats a good stir. If too thick, stir in a tablespoon or two of milk. Top with sliced banana, a drizzle of peanut butter, a sprinkle of chia seeds, or other toppings. Eat cold or microwave for 45-60 seconds if you prefer warm oats.

Notes

Mash the banana thoroughly to avoid brown mushy pockets. Warm the peanut butter for easier mixing. Chia seeds are essential for the thick, pudding-like texture. Let the oats rest for 10-12 hours for best results. Stir before eating as chia seeds and oats settle at the bottom. The oats stay fresh for up to 5 days in the refrigerator and taste even better on day 2 or 3.
