A small-batch, intimate dessert featuring tart Honeycrisp apples, a buttery oat crumble, and a rich, homemade creamy salted caramel sauce, perfectly portioned for two.

Ingredients

Scale
  • 2 medium Honeycrisp apples, peeled, cored, and diced into half-inch cubes
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon
  • 1 tablespoon brown sugar
  • 1 tablespoon cornstarch
  • 1/2 cup all-purpose flour
  • 1/4 cup rolled oats
  • 1/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 6 tablespoons unsalted butter, cold and cubed
  • 1/2 cup granulated sugar (for caramel)
  • 4 tablespoons unsalted butter (for caramel)
  • 1/4 cup heavy cream, warmed
  • 1/2 teaspoon sea salt (for caramel)
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a mixing bowl, toss diced apples with lemon juice, cinnamon, brown sugar, and cornstarch until evenly coated. Set aside.
  3. In a separate small bowl, combine flour, rolled oats, granulated sugar, and salt. Cut in the cold cubed butter using a pastry cutter or fingers until the mixture resembles coarse crumbs with pea-sized chunks.
  4. Spread the apple mixture evenly into the bottom of a 6-8 inch oven-safe skillet or small baking dish. Sprinkle the crumble topping evenly over the apples without pressing down.
  5. Bake for 25-30 minutes until the topping is golden brown and apple juices are bubbling.
  6. While the crisp bakes, make the caramel: In a medium saucepan over medium heat, melt 1/2 cup granulated sugar without stirring until it turns a deep amber color.
  7. Remove from heat and carefully stir in 4 tablespoons butter until melted. Slowly pour in the warm heavy cream while whisking vigorously (sauce will bubble).
  8. Return to low heat for 1 minute to thicken slightly. Stir in vanilla and 1/2 teaspoon sea salt.
  9. Remove crisp from oven and let cool for 5 minutes. Drizzle generously with warm caramel sauce and serve immediately.

Notes

Ensure butter is cold for the crumble to maintain texture. Warm the heavy cream before adding to hot caramel to prevent seizing. Do not rush the caramel making process; keep heat at medium-low and watch color closely. For gluten-free, use a 1:1 gluten-free flour blend. For dairy-free, substitute butter with coconut oil and cream with coconut cream.
