Creamy Slow Cooker Buffalo Chicken Dip: 3-Ingredient Easy Recipe

slow cooker buffalo chicken dip - featured image

A foolproof, creamy buffalo chicken dip made in the slow cooker with just a few simple ingredients. The chicken cooks in the sauce for maximum flavor absorption, resulting in a thick, savory dip perfect for game day or parties.

Ingredients

Scale
  • 2 large boneless, skinless chicken breasts
  • 8 ounces full-fat block cream cheese (cut into cubes)
  • 1 cup buffalo wing sauce (e.g., Frank’s RedHot)
  • 1 cup shredded cheddar cheese
  • 2 tablespoons ranch dressing (optional)

Instructions

  1. Spray the inside of a 4-quart slow cooker with non-stick cooking spray.
  2. Place chicken breasts in the bottom of the slow cooker and pour buffalo sauce over them, ensuring the chicken is coated.
  3. Cover and cook on low for 4 to 6 hours until chicken reaches an internal temperature of 165°F and shreds easily.
  4. Remove chicken from the pot and shred it into bite-sized pieces using two forks, discarding any fat or gristle.
  5. Cut the block cream cheese into 4 or 5 large cubes and drop them into the hot sauce in the slow cooker. Let sit for 10 minutes to melt, then stir gently until mostly melted.
  6. Return the shredded chicken to the slow cooker and stir to coat evenly in the creamy sauce.
  7. Sprinkle shredded cheddar cheese over the top. Cover and let sit on the ‘warm’ setting for 15 to 20 minutes until the cheese is melted.
  8. Stir gently one last time before serving. If using, swirl in ranch dressing at this stage.

Notes

Use full-fat block cream cheese, not spreadable tub cheese, to prevent a runny dip. Do not cook on high heat as it can make the chicken tough. If the dip is too thick, add a tablespoon of chicken broth or milk. If using frozen chicken, increase cooking time to 7-8 hours on low.
