A simple, creamy, and spicy 4-ingredient dip made in a slow cooker. This easy recipe combines shredded chicken, cream cheese, ranch seasoning, and buffalo sauce for a crowd-pleasing appetizer or dinner solution.

Ingredients

Scale
  • 2 large boneless, skinless chicken breasts
  • 1 cup water or chicken broth (for poaching)
  • 2 blocks (8 oz each) cream cheese, softened
  • 1 packet (1 oz) dry ranch seasoning mix
  • 1 cup buffalo wing sauce
  • 2 cups shredded sharp cheddar cheese
  • 2 tablespoons blue cheese dressing (optional)
  • 1 tablespoon unsalted butter (optional)

Instructions

  1. Place chicken breasts in the slow cooker with 1 cup of water or broth. Cover and cook on low for 3-4 hours or high for 2-3 hours until internal temperature reaches 165°F.
  2. Remove chicken from slow cooker and discard excess liquid. Shred chicken into small pieces using two forks.
  3. In a large mixing bowl, combine softened cream cheese, dry ranch seasoning, and buffalo sauce. Beat with an electric hand mixer until smooth and creamy.
  4. Add shredded chicken to the cream cheese mixture and stir to coat evenly. Stir in blue cheese dressing if using.
  5. Pour the mixture into the slow cooker. Cover and cook on low for 2-3 hours, stirring halfway through, until bubbling.
  6. Stir in shredded cheddar cheese. Cover and let sit on low for 15-30 minutes until cheese is melted and dip is hot throughout. Do not boil.
  7. Give a final stir, adjust seasoning if needed, and serve warm with tortilla chips, celery sticks, or crusty bread.

Notes

Ensure cream cheese is fully softened to avoid lumps. Drain chicken well to prevent a watery dip. Stir halfway through cooking to ensure even heating. Adjust heat level by varying the amount of buffalo sauce. Can be made ahead by prepping chicken and mixing sauce separately in the fridge.
