A quick, comforting one-pot meal that captures the flavors of classic lasagna in a creamy soup form, perfect for busy weeknights or cozy date nights.

Ingredients

Scale
  • 1/2 pound ground turkey or Italian sausage
  • 1 tablespoon olive oil
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1 cup marinara sauce
  • 1 cup chicken or vegetable broth
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • Salt and black pepper to taste
  • 1/2 cup small pasta shapes (ditalini, elbow macaroni, or small shells)
  • 1/2 cup heavy cream or half-and-half
  • 1/2 cup shredded mozzarella cheese
  • 2 tablespoons grated Parmesan cheese

Instructions

  1. Heat olive oil in a medium saucepan or Dutch oven over medium heat. Add diced onion and cook until translucent (3-4 minutes). Add minced garlic and cook for 30 seconds until fragrant.
  2. Add ground turkey or sausage to the pan. Break into small crumbles and cook until browned and no longer pink (5 minutes). Drain excess grease if desired.
  3. Pour in marinara sauce, broth, dried basil, oregano, salt, and pepper. Stir to combine, scraping up browned bits from the bottom. Bring to a gentle simmer.
  4. Add dry pasta directly to the simmering sauce. Stir to submerge, cover with a lid, and cook for 8-10 minutes until pasta is al dente, stirring occasionally.
  5. Remove the pot from heat. Stir in heavy cream to prevent curdling. The residual heat will warm the cream through.
  6. Sprinkle in shredded mozzarella and grated Parmesan cheese. Stir gently until melted and gooey. Taste and adjust seasoning with salt or pepper.
  7. Ladle into bowls and serve immediately, optionally topped with extra Parmesan or fresh basil.

Notes

Do not boil the cream after adding it to prevent curdling. Cook pasta until al dente as it will continue to absorb liquid off the heat. For freezing, freeze the soup base without the pasta and cream; add fresh pasta and cream when reheating.
