Quick and easy air fryer salmon bites coated in crispy panko and parmesan, ready in just 10 minutes. Perfect for a healthy weeknight dinner or meal prep.

Ingredients

Scale
  • 1.5 pounds salmon fillets, cut into 1-inch cubes
  • 1 cup panko breadcrumbs
  • 1/2 cup freshly grated Parmesan cheese
  • 1 large egg, beaten
  • 1 teaspoon garlic powder
  • 1 teaspoon dried dill
  • Zest of 1 lemon
  • 2 tablespoons melted butter
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Rinse salmon fillets and pat completely dry with paper towels. Cut into 1-inch uniform cubes and place in a medium bowl.
  2. In a shallow dish, combine panko breadcrumbs, Parmesan cheese, garlic powder, dried dill, lemon zest, salt, and pepper. Mix well.
  3. Beat the egg in a separate small bowl. Toss salmon cubes in the egg until lightly coated.
  4. Transfer wet salmon cubes to the breadcrumb mixture and toss until fully covered. Press crumbs gently into the fish.
  5. Preheat air fryer to 390°F (200°C).
  6. Lightly spray the air fryer basket with cooking oil. Arrange salmon bites in a single layer without overcrowding.
  7. Spray tops with oil or brush with melted butter.
  8. Air fry at 390°F (200°C) for 8-10 minutes, shaking the basket halfway through to ensure even browning.
  9. Serve immediately while hot and crispy.

Notes

Ensure salmon is completely dry before breading to prevent soggy coating. Do not overcrowd the air fryer basket; cook in batches if necessary. Internal temperature should reach 145°F. Can be stored in the fridge for up to 3 days and reheated in the air fryer at 350°F for 3-4 minutes.
