A festive fall cocktail featuring chilled champagne and apple cider, enhanced by crunchy frozen cider shards and a warm cinnamon sugar rim for a textural, dessert-like experience.

  • 1 cup 100% pure apple cider
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/4 cup granulated sugar (for rim)
  • 1 tablespoon ground cinnamon (for rim)
  • 1/4 teaspoon ground nutmeg (for rim, optional)
  • 1 bottle Champagne or Prosecco (chilled)
  • 1 cup additional apple cider (chilled)
  • Citrus wedge (for wetting rim)

Instructions

  1. Combine 1 cup apple cider, 2 tablespoons sugar, and 1 teaspoon cinnamon in a small saucepan.
  2. Heat over medium-low heat, stirring constantly until sugar is dissolved. Do not boil.
  3. Remove from heat and let cool to room temperature.
  4. Line a baking sheet with parchment paper and pour the cooled cider mixture into a thin, even layer (1/4 inch thick).
  5. Freeze for 1.5 to 2 hours until solid, then break into irregular shard-like pieces.
  6. In a shallow bowl, mix 1/4 cup sugar, 1 tablespoon cinnamon, and 1/4 teaspoon nutmeg.
  7. Run a citrus wedge around the rim of wide-rimmed glasses.
  8. Dip the wetted rims into the cinnamon sugar mixture to coat evenly; tap off excess.
  9. Fill each glass with 2-3 cider shards.
  10. Slowly pour chilled champagne or prosecco over the shards.
  11. Top with a splash of regular apple cider if desired and garnish with an apple slice or cinnamon stick.

Notes

Ensure champagne is very cold to maintain bubbles. Rim glasses immediately before serving to prevent sugar from getting soggy. Cider shards can be stored in the freezer for up to 2 weeks. For a non-alcoholic version, substitute champagne with sparkling apple cider or ginger ale.
