  • 4 cups broccoli florets (fresh or frozen)
  • 1 can (10.5 oz) condensed cream of mushroom soup (or cream of chicken soup)
  • 1/2 cup mayonnaise (can substitute with Greek yogurt)
  • 1 cup shredded cheddar cheese (sharp or mild)
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • 1 1/2 cups crushed Ritz crackers (about 120g)
  • 3 tablespoons melted butter

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. If using fresh broccoli, blanch in boiling water for 2-3 minutes until bright green and slightly tender, then drain well. If using frozen broccoli, thaw and pat dry.
  3. In a medium bowl, combine broccoli florets, condensed cream of mushroom soup, mayonnaise, shredded cheddar cheese, onion powder, garlic powder, salt, and pepper. Stir gently to coat evenly.
  4. Transfer the mixture to a greased 8×8-inch baking dish, spreading evenly.
  5. Crush Ritz crackers finely using a food processor or by placing them in a sealed bag and crushing with a rolling pin.
  6. In a small bowl, mix crushed crackers with melted butter until fully coated.
  7. Sprinkle the cracker topping evenly over the broccoli mixture, pressing lightly to help it stick.
  8. Bake uncovered for 25-30 minutes until the topping is golden brown and crisp, and the casserole is bubbly around the edges.
  9. Let the casserole rest for 5 minutes before serving.

Notes

Watch the topping closely toward the end of baking to avoid burning; tent with foil if browning too fast. For a gluten-free version, substitute Ritz crackers with gluten-free crackers or crushed nuts. For a vegan version, use vegan cream sauce, vegan mayo, vegan cheese, and vegan buttery spread with vegan crackers.
