Crispy Buffalo Chicken Stuffed Sweet Potatoes - featured image

A weeknight-friendly dinner featuring crispy air-fried or baked buffalo chicken cubes stuffed into soft, caramelized sweet potatoes, topped with a cooling Greek yogurt drizzle.

Ingredients

Scale
  • 4 medium sweet potatoes
  • 1.5 pounds boneless, skinless chicken breast, cut into 1-inch cubes
  • 1/2 cup buffalo sauce (e.g., Frank’s RedOriginal)
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon cornstarch
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1/2 cup Greek yogurt
  • 2 stalks green onions, chopped
  • Optional: Shredded cheddar cheese, crumbled blue cheese, or avocado slices

Instructions

  1. Preheat oven to 400°F (200°C). If using an air fryer, preheat to 380°F (190°C).
  2. Wash and dry sweet potatoes. Pierce each 4-5 times with a fork. Microwave on high for 5 minutes to soften, then bake on oven rack or baking sheet for 30-35 minutes until tender. Set aside.
  3. In a large bowl, toss chicken cubes with melted butter, buffalo sauce, cornstarch, garlic powder, paprika, salt, and pepper until evenly coated.
  4. Spread chicken in a single layer on a parchment-lined baking sheet. Bake for 15-20 minutes, flipping halfway, until crispy and cooked through. (If air frying, cook 10-12 minutes, shaking basket halfway).
  5. Mix Greek yogurt with a squeeze of lime juice and a pinch of salt to create the drizzle.
  6. Slice baked potatoes open lengthwise. Stuff with crispy chicken, drizzle with yogurt sauce, and top with green onions.

Notes

Microwaving potatoes first cuts oven time in half. Do not overcrowd the chicken on the baking sheet to ensure crispiness. Store chicken and potatoes separately to maintain texture when reheating.
