A simple, healthy side dish featuring roasted delicata squash rings tossed in chili, cumin, and smoked paprika, finished with fresh lime zest and juice for a bright, zesty flavor.

Ingredients

Scale
  • 2 medium delicata squash, washed and sliced into 1/2-inch rings
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly cracked black pepper
  • Zest of 1 large lime
  • Juice of 1 large lime
  • 2 tablespoons fresh cilantro, chopped (optional, for garnish)

Instructions

  1. Preheat oven to 425°F (220°C) and allow to fully preheat for at least 10 minutes.
  2. Wash the delicata squash thoroughly and scrub the skin gently to remove dirt.
  3. Slice the squash crosswise into 1/2-inch thick rings, leaving the seeds in the center.
  4. In a large bowl, whisk together olive oil, chili powder, cumin, smoked paprika, garlic powder, salt, and black pepper.
  5. Add the squash rings to the bowl and toss until every piece is evenly coated.
  6. Line a large baking sheet with parchment paper and arrange the squash rings in a single layer, ensuring they do not touch.
  7. Roast for 20 minutes, then flip each ring over with tongs.
  8. Return to the oven and roast for another 10-15 minutes until edges are golden brown and crispy.
  9. Remove from oven and immediately squeeze fresh lime juice over the hot squash and sprinkle with lime zest.
  10. Garnish with chopped cilantro if desired and serve warm.

Notes

Do not overcrowd the pan to ensure crispiness; cook in batches if necessary. Pat squash dry after washing to help spices stick. If browning too fast, cover loosely with foil. For air fryer method, cook at 400°F for 10-12 minutes, shaking halfway through.
