crispy cranberry brie bites - featured image

A simple, elegant holiday appetizer featuring flaky puff pastry filled with creamy brie cheese and tart cranberry sauce, baked until golden and bubbly.

Ingredients

Scale
  • 1 sheet puff pastry (all-butter preferred), thawed
  • 8 oz brie cheese, cut into small cubes
  • 1/2 cup cranberry sauce (whole berry or jellied)
  • 1 large egg beaten with 1 tablespoon water or milk
  • Flaky sea salt, for sprinkling

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Ensure puff pastry is thawed but still cold; lightly flour a work surface and unroll the pastry.
  3. Cut the pastry into 2-inch squares (yields 12-16 squares).
  4. Cut brie into small cubes. Spoon about 1 teaspoon of cranberry sauce onto the center of each square.
  5. Fold the pastry over the filling to create a triangle or sealed square, pressing edges firmly to seal.
  6. Brush the tops of the bites lightly with the egg wash.
  7. Bake for 12-15 minutes until puffed and golden brown.
  8. Cool on the baking sheet for 5 minutes before serving. Sprinkle with flaky sea salt if desired.

Notes

Keep the pastry cold to ensure proper rise. Do not overfill the bites to prevent leaking. If the dough gets warm, chill it in the fridge for 10 minutes before baking. Store leftovers in an airtight container in the fridge for up to 2 days and reheat in the oven at 350°F.
