  • ¼ cup low-sodium chicken broth
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon dried thyme or 34 fresh thyme sprigs
  • 1 tablespoon olive oil

Instructions

  1. Pat the chicken thighs completely dry with paper towels. Let them sit uncovered on a plate for 10 minutes if you have time.
  2. Season generously with salt and pepper on both sides.
  3. Heat a large cast-iron skillet or heavy-bottomed pan over medium-high heat for 2-3 minutes until hot but not smoking. Add olive oil and swirl to coat.
  4. Place chicken thighs skin-side down in the pan. Cook undisturbed for 6-7 minutes until skin is deep golden brown and releases easily.
  5. Flip the thighs using tongs. Cook for another 5-6 minutes on the second side. Internal temperature should reach about 160°F.
  6. Reduce heat to medium-low. Add 2 tablespoons butter, sliced garlic, and thyme. Tilt the pan and baste the butter over the chicken for about 1 minute.
  7. Add lemon juice, chicken broth, and lemon zest. Let bubble and reduce for 1-2 minutes, scraping up browned bits.
  8. Stir in remaining 1 tablespoon butter until melted and emulsified. Taste and adjust seasoning.
  9. Remove chicken from pan and let rest for 5 minutes. Internal temperature should reach 165°F during resting.
  10. Pour pan sauce over chicken. Garnish with fresh parsley and lemon slices if desired. Serve immediately.
