A quick and easy 20-minute side dish featuring delicata squash rings roasted to a perfect crisp and finished with a sweet, caramelized maple glaze.

  • 2 medium delicata squash
  • 2 tbsp avocado oil or olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup pure maple syrup
  • 1 tsp water (for glaze)
  • Optional: Fresh thyme or chopped pecans for garnish

Instructions

  1. Preheat oven to 400°F (200°C) and let it fully preheat for at least 15 minutes.
  2. Wash the delicata squash thoroughly. Cut off both ends and slice crosswise into 1/2-inch thick rings. Remove seeds from the center of each ring.
  3. Place squash rings in a large bowl. Drizzle with avocado oil and sprinkle with smoked paprika, garlic powder, onion powder, salt, and pepper. Toss gently until lightly coated.
  4. Line a baking sheet with parchment paper. Arrange squash rings in a single layer, ensuring they do not overlap.
  5. Roast for 15 minutes, flipping halfway through to ensure even browning.
  6. While squash roasts, mix maple syrup with 1 teaspoon of water in a small bowl to thin it slightly.
  7. Remove pan from oven. Brush the top side of each ring with the maple syrup mixture.
  8. Return to oven and roast for another 5-7 minutes, watching closely until the glaze bubbles and caramelizes.
  9. Remove from oven and let cool for 2 minutes to allow the glaze to set. Serve warm.

Notes

Ensure squash rings are completely dry before oiling to maximize crispiness. Do not overcrowd the pan; use two pans if necessary. For a spicy kick, add a pinch of cayenne pepper to the glaze. If using frozen squash, thaw completely and pat very dry.
