  • 2 medium delicata squash
  • 2 tablespoons olive oil
  • 2 tablespoons pure maple syrup
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ¼ teaspoon cayenne pepper
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper
  • 45 sprigs fresh thyme (optional)

Instructions

  1. Preheat your oven to 425°F (218°C). Line a baking sheet with parchment paper.
  2. Wash the squash thoroughly and pat dry.
  3. Slice off about ½ inch from each end of the squash and discard.
  4. Cut the squash crosswise into ½-inch rings.
  5. Use your thumb or a small spoon to push the seeds out of each ring.
  6. Arrange the rings in a single layer on the prepared baking sheet, leaving space between each ring.
  7. Drizzle the olive oil over the rings and toss gently to coat both sides.
  8. Sprinkle evenly with salt, pepper, garlic powder, smoked paprika, and cayenne.
  9. Roast for 10 minutes.
  10. While the squash roasts, whisk together the maple syrup and a pinch of salt in a small bowl.
  11. After 10 minutes, remove the baking sheet from the oven. Flip each ring over using tongs.
  12. Brush the tops of the rings with the maple glaze. Lay thyme sprigs on the pan if using.
  13. Roast for another 8-10 minutes, watching closely during the last 2 minutes to prevent burning.
  14. Let the rings rest on the baking sheet for 2 minutes.
  15. Transfer to a serving platter and sprinkle with flaky sea salt before serving.

Notes

Don’t skip the initial 10-minute roast without maple syrup, or the sugar will burn. Space the rings in a single layer to avoid steaming. Cut rings evenly (about the width of your thumbnail) for uniform cooking. Watch the oven closely at the end as maple syrup can burn quickly. Use room temperature maple syrup for easier spreading. For best texture, serve immediately after the 2-minute rest.
