Crockpot Cranberry Orange Sauce with Rosemary

A stress-free, slow-cooked cranberry sauce that bursts with fresh fruit flavor, balanced by sweet orange and aromatic rosemary. This recipe requires minimal effort and delivers a gourmet, chunky texture without the need for constant stirring.

Ingredients

Scale
  • 12 oz (340g) fresh cranberries
  • 1 cup (200g) granulated sugar
  • 1 cup (240ml) orange juice
  • 2 sprigs fresh rosemary
  • 1 teaspoon orange zest
  • 1/4 cup (60ml) water

Instructions

  1. Wash the orange thoroughly. Using a zester, grate the zest directly into the slow cooker insert, avoiding the white pith.
  2. Cut the orange in half and squeeze the juice into the pot. Strain to catch seeds if necessary. Add water if short on juice to reach 1 cup total liquid.
  3. Pour in the granulated sugar and water. Stir gently with a wooden spoon to help the sugar dissolve into the orange juice.
  4. Add the fresh cranberries and stir to submerge them in the liquid.
  5. Add the fresh rosemary sprigs whole to the pot. Do not chop them yet.
  6. Cover the slow cooker and set to LOW. Cook for 4-5 hours, or until 80-90% of the berries have popped open and the liquid has thickened.
  7. Turn off the slow cooker. Remove the rosemary sprigs with a slotted spoon.
  8. Optional: Mash remaining berries lightly with the back of a spoon for a smoother texture.
  9. Let the sauce cool for 10 minutes before serving; it will continue to thicken as it cools.

Notes

Do not open the lid frequently during cooking to maintain heat. Taste the sauce after it has cooled, as hot food tastes sweeter. If the sauce is too thin, leave the lid off for the last 30 minutes to evaporate moisture. If too thick, add a splash of orange juice or water. The rosemary sprigs should be removed after cooking to prevent an overpowering medicinal flavor.
