Easy 30-Minute Ground Turkey Pumpkin Chili (One Pot)

A quick, one-pot chili that combines savory ground turkey with creamy pumpkin puree and smoky spices. It’s a cozy, 30-minute meal perfect for busy weeknights and fall comfort food cravings.

  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 pound lean ground turkey (93/7)
  • 1 can (15 ounces) pure pumpkin puree
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1 can (15 ounces) tomato sauce
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) cannellini beans, drained and rinsed
  • 1 cup low-sodium chicken or vegetable broth
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon unsweetened cocoa powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt, plus more to taste
  • 1/4 teaspoon black pepper
  • Pinch of cayenne pepper (optional)
  • Your favorite toppings: shredded cheddar cheese, sour cream or Greek yogurt, sliced green onions, fresh cilantro, diced avocado, or a squeeze of lime juice

Instructions

  1. Start the aromatics. Place your large pot or Dutch oven over medium heat. Add the olive oil and let it warm up for about 30 seconds. Toss in the diced onion and cook, stirring occasionally, for 4-5 minutes, until it becomes soft and translucent. Add the minced garlic and cook for another 30 seconds, just until fragrant.
  2. Brown the turkey. Add the ground turkey to the pot. Use your wooden spoon to break it up into small crumbles. Cook for 5-7 minutes, stirring occasionally, until the turkey is no longer pink.
  3. Bloom the spices. Sprinkle the chili powder, cumin, smoked paprika, cinnamon, cocoa powder, oregano, salt, pepper, and cayenne (if using) over the cooked turkey and onions. Stir everything together and cook for 1-2 minutes, until the spices are fragrant.
  4. Add the liquids and pumpkin. Pour in the can of diced tomatoes (with their juices), the tomato sauce, and the chicken or vegetable broth. Add the entire can of pumpkin puree. Stir well to combine everything, making sure the pumpkin is fully incorporated.
  5. Add the beans. Gently stir in the drained and rinsed black beans and cannellini beans.
  6. Simmer. Bring the chili to a gentle boil, then reduce the heat to low. Cover the pot with a lid slightly ajar to let some steam escape. Let it simmer for 15-20 minutes, stirring occasionally.
  7. Taste and adjust. After simmering, give the chili a taste. Adjust seasoning as needed (more salt, chili powder, or a squeeze of lime juice).
  8. Serve. Ladle the chili into bowls and top with your favorite garnishes.

Notes

Don’t skip blooming the spices for maximum flavor. Use 93/7 lean ground turkey for best texture. A little cinnamon goes a long way—stick to 1/2 teaspoon. Chili tastes even better the next day. Adjust consistency with extra broth or by simmering uncovered.
