A moist and flavorful slow cooker meatloaf made with just five simple ingredients. This recipe steams the meat in its own juices for a tender, juicy result that is perfect for busy weeknights.

Ingredients

Scale
  • 2 pounds ground beef (80/20 lean-to-fat ratio)
  • 1 cup crushed crackers (such as Ritz)
  • 1 large onion (finely diced or grated)
  • 2 large eggs (room temperature)
  • 1 cup meatloaf glaze or ketchup

Instructions

  1. Spray the inside of a 4- or 6-quart slow cooker with non-stick cooking spray.
  2. In a large bowl, crack the eggs and add the grated or finely diced onion; whisk briefly to combine.
  3. Add the crushed crackers to the bowl and mix gently. Do not overmix.
  4. Add the ground beef to the bowl and gently fold it into the mixture using your hands until just combined. Avoid overmixing to prevent tough texture.
  5. Transfer the meat mixture to the slow cooker and shape it into an oval or rectangular loaf, slightly higher in the middle to ensure even cooking.
  6. Spoon the ketchup or glaze over the top of the meatloaf and spread it evenly to cover the surface.
  7. Cover and cook on Low for 6-7 hours or on High for 3-4 hours, until the internal temperature reaches 160°F (71°C).
  8. Let the meatloaf rest for 10 minutes before slicing to allow juices to redistribute.

Notes

Do not drain the fat from the slow cooker as it adds flavor and moisture. If the meat looks dry halfway through, spoon some of the accumulated juices back over the loaf. Ensure you do not overmix the meat to keep it tender. Let the meatloaf rest for 10 minutes after cooking to help it hold together when sliced.
