Easy Apple Cider Mimosa Bar: Perfect Fall Brunch Idea

A simple, customizable mimosa bar featuring apple cider, Prosecco, and fall garnishes like cinnamon sticks, pomegranate arils, and fresh rosemary. Perfect for effortless fall entertaining.

  • 1 bottle (32 ounces) apple cider, chilled
  • 1 bottle (750 ml) Prosecco or Brut Champagne, chilled
  • 23 fresh apples (Honeycrisp, Fuji, or Granny Smith), thinly sliced
  • 46 cinnamon sticks
  • ½ cup pomegranate arils
  • 46 fresh rosemary sprigs
  • 23 tablespoons maple syrup or honey (optional)
  • Ice (optional, for serving)

Instructions

  1. Chill glasses in the freezer for 10-15 minutes. Ensure Prosecco and apple cider are well chilled.
  2. Wash and dry apples. Slice thinly (about ¼-inch thick) and toss with a squeeze of lemon juice to prevent browning. Rinse and pat dry pomegranate arils. Break rosemary sprigs into 3-inch pieces.
  3. Arrange chilled glasses on the bar. Place Prosecco in an ice bucket or wine chiller. Pour apple cider into a small pitcher or carafe. Set out garnish bowls with cinnamon sticks, rosemary, apple slices, and pomegranate arils.
  4. To build each mimosa: Fill glass about one-third full with apple cider. Slowly top off with Prosecco, pouring down the side of the glass to preserve bubbles. Use a ratio of 1 part cider to 2 parts Prosecco.
  5. Add garnishes: drop in a cinnamon stick, a few pomegranate arils, a thin apple slice, and a rosemary sprig. For a sweeter mimosa, drizzle in maple syrup or honey and stir gently.
  6. Serve immediately while bubbles are lively and garnishes are fresh.

Notes

Chill glasses for 10 minutes before serving to keep drinks colder longer. For non-alcoholic version, substitute Prosecco with sparkling cider or dry ginger ale. Rosemary can be gently slapped between palms to release oils before adding to glass. Prep garnishes a day ahead: slice apples and toss in lemon juice, store in airtight container in fridge; keep pomegranate arils separate.
