Easy Baked Cranberry Brie Bites (Perfect Holiday Appetizer)

These Easy Baked Cranberry Brie Bites in Puff Pastry are the perfect holiday appetizer. With buttery, flaky pastry, warm, gooey brie, and sweet-tart cranberry sauce, they come together in about 25 minutes and are always a crowd-pleaser.

  • 1 sheet frozen puff pastry (about 9x9 inches), thawed
  • 4 ounces brie cheese, rind removed
  • 1/4 cup whole berry cranberry sauce
  • 1 large egg, beaten (for egg wash)
  • Fresh rosemary or thyme, for garnish (optional)
  • Flaky sea salt, for sprinkling

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly grease a 24-cup mini muffin tin with non-stick spray or butter.
  2. On a lightly floured surface, gently unfold the thawed puff pastry. Roll it out slightly to a 10×10 inch square to smooth out creases. Cut the pastry into 24 squares, each about 1.5 to 2 inches.
  3. Gently press each square into a well of the prepared mini muffin tin, letting the corners stick up.
  4. Cut the rind off the brie (freeze for 10-15 minutes first for easier cutting). Cut the brie into 24 small cubes, about 1/2 inch each.
  5. Place one cube of brie into each pastry cup. Top each cube with about 1/2 teaspoon of cranberry sauce.
  6. In a small bowl, beat the egg with a teaspoon of water. Brush the exposed edges of the puff pastry with the egg wash. Sprinkle a tiny pinch of flaky sea salt over each bite.
  7. Bake for 12-15 minutes, until the pastry is puffed and deeply golden brown and the cheese is bubbly.
  8. Let the bites cool in the pan for exactly 5 minutes. Use a small offset spatula or butter knife to gently remove them. Garnish with fresh rosemary or thyme and serve warm.

Notes

Keep everything cold for best puff pastry results. Do not overfill cups. Let bites rest in pan for exactly 5 minutes before removing. Can be assembled (without egg wash) up to 24 hours in advance and refrigerated. For variations, try fig jam, hot pepper jelly, or honey and walnuts instead of cranberry sauce.
