Instructions

  1. Zest and juice your lemon first. Wash the lemon under warm water, zest the entire lemon to get about 1 tablespoon of zest, then roll the lemon firmly on the counter, cut it in half, and squeeze out 2 tablespoons of juice. Set both aside.
  2. Mix the wet ingredients. In a small bowl or directly in the mason jar, combine 1 cup milk, ½ cup Greek yogurt, 2 tablespoons honey (or maple syrup), 2 tablespoons lemon juice, 1 tablespoon lemon zest, 1 teaspoon vanilla extract, and a pinch of salt. Whisk or stir until smooth. Taste and adjust honey if needed.
  3. Add the rolled oats. Pour 1 cup rolled oats into the jar and stir well to coat every oat in the liquid mixture, ensuring no clumps.
  4. Layer in the blueberries. Gently fold in 1 cup frozen blueberries. Do not overmix; you want some berries to stay whole and burst as they thaw. If using fresh blueberries, press a few gently against the side of the jar to release some juice.
  5. Seal and refrigerate. Put the lid on tight and place the jar in the fridge. Let it sit for at least 4 hours, but overnight (8-12 hours) is ideal.
  6. Serve cold or at room temperature. In the morning, give the jar a good stir. The texture should be thick, creamy, and spoonable. If too thick, stir in a splash of milk. If too thin, let it sit another hour. Garnish with extra lemon zest and a few fresh blueberries if desired.
