Easy Creamy Tuscan Chicken Skillet Ready in 30 Minutes

A quick and easy creamy Tuscan chicken skillet that comes together in just 30 minutes. Tender chicken breasts are seared and simmered in a luscious sauce with sun-dried tomatoes, spinach, and Parmesan cheese.

  • 1.5 pounds (680g) boneless, skinless chicken breasts
  • ½ cup (80g) oil-packed sun-dried tomatoes, drained and chopped
  • 1 cup (240ml) heavy cream
  • ½ cup (120ml) low-sodium chicken broth
  • 3 cups (90g) fresh spinach
  • ½ cup (50g) freshly grated Parmesan cheese
  • 4 cloves garlic, minced
  • 1 teaspoon dried Italian seasoning
  • ½ teaspoon onion powder
  • ¼ teaspoon red pepper flakes (optional)
  • 2 tablespoons (30ml) olive oil (or reserved oil from sun-dried tomatoes)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prep the chicken: Place chicken breasts on a cutting board. Cover with plastic wrap and gently pound to ½-inch thickness, or slice horizontally into thin cutlets. Pat dry with paper towels. Season both sides with salt, black pepper, and half of the Italian seasoning.
  2. Sear the chicken: Heat a large skillet over medium-high heat and add olive oil. Once shimmering, add chicken in a single layer (work in batches if needed). Cook 4-5 minutes per side until golden brown and internal temperature reaches 165°F (74°C). Transfer to a plate and tent with foil. Do not clean the pan.
  3. Build the sauce: Reduce heat to medium. Add minced garlic and cook 30 seconds until fragrant. Add chopped sun-dried tomatoes and cook 1 minute. Pour in chicken broth and scrape up browned bits from the pan bottom.
  4. Make it creamy: Pour in heavy cream and stir. Add remaining Italian seasoning, onion powder, and red pepper flakes (if using). Simmer gently 2-3 minutes until sauce thickens slightly. Taste and adjust salt and pepper.
  5. Add spinach and Parmesan: Add spinach in handfuls, stirring until wilted (about 2 minutes). Sprinkle in grated Parmesan and stir until melted and sauce thickens. Add more broth if too thick.
  6. Return the chicken: Nestle chicken back into the skillet, spooning sauce over top. Simmer 2-3 minutes until heated through.
  7. Garnish and serve: Remove from heat. Sprinkle with fresh parsley. Let rest 2 minutes before serving.

Notes

For a thicker sauce, mix 1 teaspoon cornstarch with 1 tablespoon cold water and stir into sauce before returning chicken. Let chicken rest after searing to keep it juicy. Grate your own Parmesan for best melting. Keep heat at medium-low after adding cream to prevent curdling.
