Ingredients

  • Boneless, skinless chicken thighs
  • Honey
  • Fresh garlic, minced
  • Low-sodium soy sauce
  • Rice vinegar
  • Fresh ginger, grated
  • Cornstarch
  • Cold water (for slurry)
  • Green onions, chopped (for garnish)
  • Toasted sesame seeds (optional)
  • Red pepper flakes (optional)

Instructions

  1. Pat chicken thighs dry and place them in the slow cooker.
  2. In a medium bowl, whisk together honey, soy sauce, rice vinegar, minced garlic, grated ginger, and red pepper flakes.
  3. Pour the sauce over the chicken and stir to coat evenly.
  4. Cover and cook on low for 6-7 hours or on high for 3-4 hours until chicken is tender.
  5. About 30 minutes before serving, mix cornstarch with cold water to create a smooth slurry.
  6. Pour the slurry into the slow cooker and stir gently.
  7. Cover and cook on high for the remaining 30 minutes until the sauce is thick and glossy.
  8. Serve sprinkled with green onions and sesame seeds over rice or noodles.

Notes

Use chicken thighs for juicier results; chicken breasts require less cooking time (4 hours on low). Ensure cornstarch is mixed with cold water to prevent clumping. The sauce thickens further upon refrigeration; add water when reheating. For a gluten-free version, substitute soy sauce with tamari.
