  • 1/4 cup pure pumpkin puree (not pumpkin pie filling—make sure it’s 100% pumpkin)
  • 2 teaspoons pumpkin pie spice (store-bought is fine, or use homemade blend below)
  • 1 teaspoon vanilla extract (pure vanilla extract, not imitation)
  • 1/2 teaspoon ground cinnamon (Ceylon cinnamon for a milder, sweeter note)
  • 1/4 teaspoon ground nutmeg (freshly grated if you have it)
  • Pinch of ground cloves (a little goes a long way)
  • Pinch of salt (non-negotiable—balances sweetness and enhances spices)
  • For the Homemade Pumpkin Pie Spice Blend (optional but recommended):
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground allspice
  • 1/4 teaspoon ground cloves

Instructions

  1. Combine water and sugar: In a small saucepan, add the water and sugar. Place over medium heat and whisk gently until the sugar dissolves completely, about 2-3 minutes. The liquid should look clear with no graininess on the bottom.
  2. Add the pumpkin and spices: Whisk in the pumpkin puree, pumpkin pie spice (or homemade blend), ground cinnamon, nutmeg, cloves, and salt. Keep whisking until the pumpkin is fully incorporated. It may look clumpy at first but will smooth out as it heats.
  3. Simmer gently: Bring the mixture to a gentle simmer (small bubbles around the edges, not a rolling boil). Let it simmer for 5-7 minutes, whisking occasionally.
  4. Remove from heat and add vanilla: Take the saucepan off the heat. Stir in the vanilla extract.
  5. Strain (optional): For a perfectly smooth syrup, place a fine-mesh strainer over a heat-safe bowl or directly over your storage jar. Pour the syrup through the strainer, using a spatula to press the liquid through. Discard the pumpkin pulp and spice solids.
  6. Cool and store: Let the syrup cool completely in the jar at room temperature. It will thicken slightly as it cools. Once cool, screw on the lid and refrigerate. It will keep for up to 2 weeks.

Notes

Don’t boil the syrup too hard as it can cause sugar crystallization. Use a whisk to break up pumpkin clumps. Taste as you go and adjust spices to your preference. Let the syrup cool completely before refrigerating to avoid condensation. The flavor improves after a day or two in the fridge. For a sugar-free version, use granulated monk fruit sweetener or allulose. You can also substitute pumpkin puree with cooked and mashed butternut squash or sweet potato.
