  • 1 cup (200g) granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon pure vanilla extract
  • 2 cups (250g) all-purpose flour
  • 2 tablespoons cornstarch
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon green gel food coloring
  • 24 candy eyes
  • 1 tube black decorating icing
  • For the green icing: 1 cup (120g) powdered sugar, 2-3 tablespoons milk, a tiny drop of green gel food coloring

Instructions

  1. Cream the butter and sugar together in a large bowl until light and fluffy, about 3-4 minutes. Scrape down the sides halfway through.
  2. Add the egg and vanilla extract, beating until well combined. The mixture may look slightly curdled.
  3. In a separate bowl, whisk together the flour, cornstarch, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet mixture, mixing on low speed or folding with a spatula until just combined. Do not overmix.
  5. Add the green gel food coloring and mix until evenly distributed. The dough should be a vibrant green.
  6. Wrap the dough in plastic wrap, flatten into a disc, and refrigerate for at least 30 minutes.
  7. Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper.
  8. Scoop rounded tablespoons of dough (about 1.5 tablespoons each) and roll into balls. Place on prepared baking sheets, spacing 2 inches apart.
  9. Bake for 10-12 minutes, until edges are set and lightly golden, and tops have fine cracks. Centers will still look soft.
  10. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  11. Once cool, mix the green icing: combine powdered sugar, 2-3 tablespoons milk, and a tiny drop of green gel food coloring until smooth.
  12. Spread a thin layer of green icing on each cookie, leaving edges exposed. While wet, press two candy eyes into the center.
  13. Use black decorating icing to draw a small witch hat on the top and a little ‘o’ shape for the mouth. Let icing set for 15 minutes before serving.

Notes

Butter must be properly softened (left out for about 1 hour). Do not skip chilling the dough—it prevents excessive spreading. Watch the oven closely; cookies go from perfect to overdone quickly. Let cookies cool completely before decorating to prevent icing from sliding off.
