  • ¼ cup chocolate chips (45g)
  • 2 tablespoons ground flaxseed (14g)
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt

Instructions

  1. In a medium mixing bowl, combine ½ cup creamy peanut butter, ⅓ cup honey (or maple syrup), and 1 teaspoon vanilla extract. Stir until smooth and well combined.
  2. Add 1 cup rolled oats, ¼ cup chocolate chips, 2 tablespoons ground flaxseed, and ¼ teaspoon salt to the bowl. Stir until the mixture is uniform and no dry patches remain.
  3. Let the mixture sit at room temperature for 5-10 minutes to allow the oats to absorb moisture.
  4. Using your hands, scoop out about 1 tablespoon of the mixture and roll it between your palms to form a ball. Repeat to make 16-18 bites.
  5. Place the rolled bites on a parchment-lined baking sheet or plate. Refrigerate for at least 30 minutes to firm up.
  6. Enjoy chilled or at room temperature.

Notes

Let the mixture rest for 5-10 minutes before rolling to improve texture. If mixture is too dry, add a teaspoon of honey or a splash of milk. If too sticky, add a tablespoon more oats. Wet your hands lightly to prevent sticking. For best results, chill for 1-2 hours or overnight.
