A quick and easy breakfast casserole combining the soft, custardy texture of French toast with the sweet, cinnamon-spiced flavor of cinnamon rolls. Perfect for busy mornings and can be prepared the night before.

  • 8 large refrigerated cinnamon rolls with icing included
  • 6 large eggs, room temperature
  • 2 cups (480 ml) whole milk (can substitute almond, oat, or soy milk)
  • 1/2 cup (120 ml) heavy cream (can substitute with more milk)
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 cup (50 grams) brown sugar
  • Pinch of salt
  • Optional toppings: chopped pecans or walnuts, powdered sugar, maple syrup

Instructions

  1. Remove the cinnamon rolls from the package and cut each into quarters. Arrange them evenly in a greased 9×13-inch baking dish.
  2. In a large mixing bowl, whisk together 6 large eggs, 2 cups whole milk, 1/2 cup heavy cream, 2 teaspoons vanilla extract, 1 teaspoon ground cinnamon, 1/4 cup brown sugar, and a pinch of salt until smooth.
  3. Slowly pour the custard mixture evenly over the cinnamon roll pieces, pressing gently with a spatula to help them soak up the custard. Cover tightly with foil or plastic wrap and refrigerate overnight (at least 8 hours).
  4. Preheat oven to 350°F (175°C). Remove casserole from fridge and let sit at room temperature for 10 minutes.
  5. Cover the casserole with foil and bake for 30 minutes.
  6. Remove foil and bake an additional 15–20 minutes until the top is golden brown and custard is set (a knife inserted should come out clean).
  7. Drizzle cinnamon roll icing over the casserole while warm or just before serving. Optionally, sprinkle chopped nuts or powdered sugar and serve with maple syrup or fresh fruit.

Use room temperature eggs for a smooth custard. Soaking overnight is key for custardy texture. Cover casserole during initial baking to prevent drying. Fresh cinnamon enhances flavor. Variations include adding berries, nuts, or chocolate chips. Gluten-free and dairy-free substitutions are possible.
