Creamy, high-protein overnight oats with peanut butter and chocolate chips that taste like dessert but keep you full until lunch. Ready in 5 minutes with no cooking required.

  • 1/2 cup (50g) rolled oats
  • 1/2 cup (120ml) milk of choice
  • 1/4 cup (60g) plain Greek yogurt
  • 1 scoop (about 30g) vanilla protein powder
  • 2 tablespoons (32g) creamy peanut butter
  • 1 tablespoon (12g) chia seeds
  • 1 tablespoon (15ml) maple syrup or honey
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • 1 tablespoon mini chocolate chips (optional)
  • Additional peanut butter drizzle (optional)
  • Sliced banana or fresh berries (optional)
  • Chopped peanuts (optional)

Instructions

  1. In a jar or container, combine rolled oats, chia seeds, protein powder, and a pinch of salt. Stir to distribute evenly.
  2. Add milk, Greek yogurt, peanut butter, maple syrup, and vanilla extract on top of the dry ingredients. Do not stir yet.
  3. Stir everything together thoroughly for about 30 seconds until the mixture is uniform and no streaks remain.
  4. Check consistency: the mixture should be slightly thinner than you think it should be, as oats will absorb liquid overnight. Add more milk if too thick, or more oats if too thin.
  5. If using mini chocolate chips, stir half into the mixture and reserve the rest for topping. Add other toppings like chopped peanuts now if desired.
  6. Cover the jar with a lid and refrigerate for at least 6 hours, preferably 8-12 hours (overnight).
  7. In the morning, stir the oats well. If too thick, add a splash of milk. Add fresh toppings like banana or berries, and enjoy cold or warmed up.

Notes

Use room temperature peanut butter for easier mixing. Different protein powders behave differently; plant-based may need extra milk. Do not skip the salt—it enhances peanut butter flavor. For warm oats, microwave 45-60 seconds. Make up to 5 days ahead; best within 3 days.
