A homemade version of the popular Starbucks drink featuring a rich, spiced pumpkin cream cold foam layered over smooth, cold-brewed coffee. It offers full control over sweetness and strength with simple ingredients.

Ingredients

Scale
  • 1 cup coarse ground coffee beans (medium-dark roast)
  • 4 cups cold or room temperature filtered water
  • 1/2 cup cold heavy whipping cream
  • 1/4 cup whole milk
  • 1 tablespoon 100% pure pumpkin puree
  • 1/4 teaspoon pumpkin pie spice
  • 1/2 teaspoon pure vanilla extract
  • 1–2 tablespoons vanilla syrup or granulated sugar
  • 1 pinch sea salt
  • Ice cubes
  • Extra pumpkin spice for garnish (optional)

Instructions

  1. Grind coffee beans to a coarse consistency and combine with 4 cups of water in a French press or pitcher.
  2. Stir gently to saturate grounds, cover, and refrigerate to steep for 12-24 hours.
  3. Strain the coffee through a fine-mesh sieve or French press filter to remove grounds, creating a concentrate.
  4. In a small bowl, combine cold heavy cream, whole milk, pumpkin puree, vanilla extract, pumpkin pie spice, salt, and sweetener.
  5. Whisk or froth the mixture until it becomes thick, airy, and resembles soft-serve ice cream, holding its shape.
  6. Fill a glass about 3/4 full with ice cubes.
  7. Pour the cold brew concentrate over the ice, leaving space at the top.
  8. Slowly spoon the pumpkin cream foam over the back of a spoon onto the surface of the coffee to create layers.
  9. Sprinkle with extra pumpkin spice and serve immediately with a straw.

Notes

Ensure all dairy ingredients are ice-cold for the best foam stability. Do not use pumpkin pie filling; use 100% pure pumpkin puree. The cold brew concentrate can be stored in the refrigerator for up to two weeks. The foam should be made fresh just before serving. For a dairy-free version, substitute heavy cream with chilled full-fat coconut cream.
