  • 2 cups (480 ml) fresh watermelon juice, blended and strained
  • 1 packet (7g) unflavored gelatin powder or 4 sheets leaf gelatin
  • 2 tablespoons granulated sugar (adjust based on watermelon sweetness)
  • 1 tablespoon fresh lime juice
  • Optional: 1 oz (30 ml) vodka or rum for adult shots
  • 1 cup (240 ml) freshly squeezed lemon juice
  • 1 cup (240 ml) water
  • 3 tablespoons granulated sugar
  • 1 packet (7g) unflavored gelatin powder or 4 sheets leaf gelatin
  • Optional: 1 teaspoon lemon zest
  • Optional: 1 oz (30 ml) clear spirit like gin or vodka
  • Fresh mint leaves for garnish
  • Small plastic or glass shot cups (2 oz / 60 ml size recommended)

Instructions

  1. Prepare the Watermelon Layer: Pour 2 cups (480 ml) of fresh watermelon juice into a medium saucepan. Sprinkle 1 packet (7g) of gelatin powder evenly over the juice to bloom. Let sit for 5 minutes. Heat gently over low heat, stirring constantly until gelatin and 2 tablespoons sugar dissolve fully (3-4 minutes). Remove from heat and stir in 1 tablespoon fresh lime juice and optional 1 oz (30 ml) vodka or rum. Let cool slightly but not set.
  2. Pour Watermelon Layer: Carefully spoon or pour the watermelon gelatin mixture into shot cups, filling each about halfway. Refrigerate for 20–25 minutes, or until firm to the touch but still slightly jiggly.
  3. Prepare the Lemonade Layer: While the watermelon layer sets, combine 1 cup (240 ml) lemon juice, 1 cup (240 ml) water, and 3 tablespoons sugar in a saucepan. Bloom another packet (7g) gelatin in 1/4 cup (60 ml) cold water for 5 minutes. Heat lemon mixture gently until warm but not boiling, then stir in bloomed gelatin until dissolved. Add optional lemon zest and 1 oz (30 ml) clear spirit if desired. Cool slightly.
  4. Layer the Lemonade: Slowly pour the lemonade gelatin mixture over the set watermelon layer in each cup, pouring gently to avoid breaking the first layer. Refrigerate for at least 1 hour or until fully set.
  5. Garnish and Serve: Just before serving, garnish each shot with a small mint leaf or a tiny wedge of lemon for extra freshness.

Notes

Bloom gelatin properly by sprinkling over cold liquid and letting it sit before heating to avoid clumps. Heat gelatin mixtures gently on low heat and stir constantly. Cool each layer to room temperature and let it start to set before adding the next layer to maintain distinct layers. Pour the second layer slowly over the back of a spoon to prevent breaking the first layer. Store leftovers in an airtight container in the fridge for up to 3 days. Avoid freezing to maintain texture. For non-alcoholic versions, omit spirits and add sparkling water for fizz.
