  • 2 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup (227 grams) unsalted butter, softened
  • 1 ¾ cups (350 grams) granulated sugar
  • 4 large eggs, room temperature
  • 1 cup (240 ml) buttermilk, room temperature
  • 2 teaspoons pure vanilla extract (preferably Madagascar vanilla)
  • ¾ cup (about 110 grams) rainbow sprinkles

Instructions

  1. Preheat your oven to 350°F (175°C). Position the oven rack in the center. Grease two 8-inch round cake pans with butter or nonstick spray and line the bottoms with parchment paper circles.
  2. In a large bowl, sift together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a separate bowl, beat the softened butter and granulated sugar on medium-high speed for about 4-5 minutes until pale and fluffy.
  4. Beat in the eggs one at a time, mixing well after each addition. Scrape down the bowl sides as needed.
  5. Stir in the vanilla extract.
  6. Alternately add the dry ingredients and buttermilk to the butter mixture, starting and ending with the dry ingredients. Mix on low speed just until combined after each addition. Avoid overmixing.
  7. Gently fold in the rainbow sprinkles with a rubber spatula to avoid color bleeding or sinking.
  8. Divide the batter evenly between the prepared pans and smooth the tops.
  9. Bake for 28-32 minutes, starting to check at 28 minutes with a toothpick inserted in the center; it should come out clean or with a few moist crumbs.
  10. Let the cakes cool in the pans for 10-15 minutes, then turn out onto a cooling rack. Remove parchment paper and cool completely before frosting.

Notes

Use room temperature ingredients for best results. Fold sprinkles gently to prevent color bleeding. If sprinkles bleed, toss them in a tablespoon of flour before folding. Start checking cake doneness early to avoid overbaking. Cool cakes completely before frosting.
