Ingredients

Scale
  • 1 ½ cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • ¾ cup buttermilk
  • 1 jar (7 oz) marshmallow fluff
  • ½ cup unsalted butter, softened (for frosting)
  • 2–3 cups confectioners’ sugar
  • 1 teaspoon vanilla extract (for frosting)
  • 1–2 tablespoons milk (for frosting)
  • Black icing gel or edible markers
  • White cupcake liners

Instructions

  1. Preheat oven to 350°F (175°C) and line a 12-cup muffin tin with white paper liners.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a large bowl, beat softened butter and granulated sugar on medium-high speed for 3-4 minutes until pale and fluffy.
  4. Add eggs one at a time, beating well after each addition, then mix in vanilla extract.
  5. Add half of the dry ingredients to the butter mixture, then add buttermilk, followed by remaining dry ingredients. Mix just until combined.
  6. Divide batter evenly among liners, filling each about 2/3 full.
  7. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  8. Cool cupcakes in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  9. For frosting, beat softened butter until creamy, add marshmallow fluff, and beat until smooth.
  10. Gradually add confectioners’ sugar and vanilla, beating on low then high until fluffy. Add milk if needed.
  11. Spoon frosting into a piping bag fitted with a star tip.
  12. Pipe a tall mound on each cupcake, then a smaller mound on top for the head, pulling down slightly to create a draped ghost look.
  13. Draw faces using black icing gel or edible markers.

Notes

Ensure ingredients are at room temperature for best emulsification. Do not overmix the batter to keep cupcakes tender. Store unfrosted cupcakes at room temperature for up to 2 days; do not refrigerate as frosting will harden. Can freeze unfrosted cupcakes for up to 3 months.
