  • Thinly sliced radishes or green onions (for garnish)

Instructions

  1. Prepare the Guacamole Layer: In a medium bowl, scoop out the avocado flesh. Add the lime juice immediately to help prevent browning. Use a fork or potato masher to mash until creamy but still slightly chunky. Stir in the finely diced red onion, minced garlic, salt, and pepper. Taste and adjust seasoning. Set aside.
  2. Make the Jalapeño Layer: In a small bowl, combine the diced jalapeño, chopped cilantro, and lime juice. Mix well. This layer should taste bright and tangy with a noticeable but not overwhelming heat. If you want it milder, remove all the seeds.
  3. Layer the Dip: In your serving dish, spread the guacamole evenly as the base layer. Next, carefully spoon the jalapeño mixture over the guacamole, spreading it out so it forms a distinct layer but doesn’t mix in too much.
  4. Add the Pomegranate: Sprinkle the pomegranate seeds evenly over the jalapeño layer. For a subtle smoky touch, dust with a pinch of smoked paprika if using.
  5. Garnish: Finish with fresh cilantro leaves and thin radish or green onion slices to add color and crunch.
  6. Chill and Serve: Refrigerate for 10-15 minutes if you have time—this helps flavors meld but it’s tasty immediately. Serve with sturdy tortilla chips, sliced veggies, or as a topping for grilled meats.

Notes

To prevent browning, add lime juice immediately to the avocado and press plastic wrap directly onto the guacamole surface before layering. Keep guacamole slightly chunky for better layering. Adjust jalapeño seeds to control heat. Add pomegranate seeds and garnish just before serving for best texture. Can substitute pomegranate with mango or pineapple for seasonal variation.
