  • 6 oz (170 g) block feta cheese, cut into 1-inch cubes
  • Fresh mint leaves, washed and patted dry
  • Fresh basil leaves, washed and patted dry
  • Extra virgin olive oil (optional, for light drizzle)
  • Freshly ground black pepper (optional)
  • Honey (optional, for drizzle)

Instructions

  1. Cut the watermelon into 1-inch (2.5 cm) cubes, keeping pieces uniform for even assembly.
  2. Slice the feta block into cubes roughly the same size as the watermelon pieces. Chill feta for 10 minutes beforehand if too crumbly.
  3. Rinse mint and basil leaves under cold water and gently pat dry to remove excess moisture.
  4. Optional: Toss watermelon cubes lightly with a teaspoon of extra virgin olive oil and a drizzle of honey in a mixing bowl for added flavor and shine.
  5. Assemble the skewers by threading one watermelon cube, followed by a mint leaf, a feta cube, and finishing with a basil leaf. Repeat if skewers are long enough or keep one set per skewer.
