  • 1 ¾ cups (210g) whole wheat pastry flour (or all-purpose flour)
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • 2 teaspoons pumpkin pie spice
  • ½ teaspoon ground cinnamon

  • 1 cup (245g) plain Greek yogurt (full-fat or 2%)
  • 1 cup (245g) pumpkin puree (100% pure pumpkin)
  • ½ cup (120ml) pure maple syrup
  • ¼ cup (60ml) honey
  • 2 large eggs, at room temperature
  • ¼ cup (60ml) melted coconut oil (or avocado oil)
  • 1 teaspoon vanilla extract
  • 2 tablespoons pepitas (pumpkin seeds) (optional topping)
  • 1 tablespoon rolled oats (optional topping)
  • 1 teaspoon maple sugar (optional topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment paper, leaving some overhang on the long sides. Lightly spray the parchment with non-stick spray.
  2. In a medium bowl, whisk together the whole wheat pastry flour, baking soda, baking powder, pumpkin pie spice, cinnamon, and salt.
  3. In a large bowl, whisk together the Greek yogurt, pumpkin puree, maple syrup, honey, eggs, melted coconut oil, and vanilla extract until smooth and glossy.
  4. Pour the dry ingredients into the wet ingredients. Use a rubber spatula to fold them together gently until just combined. Do not overmix.
  5. In a small bowl, mix the pepitas, rolled oats, and maple sugar for the optional topping. Set aside.
  6. Pour the batter into the prepared loaf pan and spread into an even layer. Sprinkle the pepita-oat mixture evenly over the top.
  7. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs. If the top is browning too quickly after about 40 minutes, tent loosely with aluminum foil.
  8. Let the bread cool in the pan for 10 minutes. Then, use the parchment paper to lift it out and transfer to a wire rack to cool completely before slicing.
