Ingredients

Scale
  • 2 ¼ cups (280g) all-purpose flour
  • 1 packet (2 ¼ tsp) active dry yeast
  • ¾ cup (180ml) warm water (about 110°F)
  • 1 tbsp granulated sugar
  • 2 tbsp unsalted butter, melted
  • ½ tsp salt
  • 1 ½ cups cooked shredded chicken (about 2 small breasts)
  • 4 oz cream cheese, softened
  • ⅓ cup buffalo sauce (e.g., Frank’s RedHot)
  • ½ cup shredded cheddar cheese
  • 2 tbsp blue cheese or ranch dressing (optional)
  • 2 tbsp green onions, finely chopped
  • ⅓ cup baking soda
  • 4 cups water
  • 1 large egg, beaten
  • 12 tsp coarse sea salt

Instructions

  1. Make the dough: In a large bowl, combine warm water (110°F), sugar, and yeast. Let sit for 5 minutes until foamy. Add melted butter, salt, and 1 cup of flour. Mix until combined. Gradually add remaining flour, kneading until a smooth dough forms (about 5 minutes by hand or 3 minutes in a stand mixer). The dough should be soft and slightly tacky.
  2. Let it rise: Place dough in a lightly greased bowl, cover, and let rise in a warm spot for 30 minutes until doubled in size.
  3. Make the filling: While dough rises, combine shredded chicken, softened cream cheese, buffalo sauce, cheddar cheese, and green onions in a bowl. Mix well. Add blue cheese or ranch dressing if using. Taste and adjust spice level.
  4. Preheat and prep: Preheat oven to 425°F. Line a baking sheet with parchment paper. In a small saucepan, bring 4 cups of water to a boil. Carefully add baking soda (it will bubble), stir until dissolved, then reduce to a simmer.
  5. Shape the bites: Punch down risen dough and turn onto a lightly floured surface. Divide into 4 equal pieces. Roll each into a 12-inch rope. Cut each rope into 12 pieces (about 1 inch each) for 48 total pieces. Flatten each piece into a 2-inch circle.
  6. Stuff them: Place about 1 teaspoon of filling in the center of each dough circle. Fold edges up and pinch to seal tightly. Roll gently between palms to form a smooth ball, ensuring no gaps.
  7. The baking soda bath: Working in batches of 6-8, drop pretzel bites into simmering baking soda water. Cook for 30 seconds, then remove with a slotted spoon. Place on prepared baking sheet, seam side down, about 1 inch apart.
  8. Egg wash and salt: Brush each pretzel bite with beaten egg. Sprinkle generously with coarse sea salt.
  9. Bake: Bake for 12-15 minutes until deep golden brown and puffed.
  10. Cool and serve: Let cool on baking sheet for 5 minutes before transferring to a serving plate. Serve warm with extra buffalo sauce, ranch dressing, or blue cheese dip.

Notes

The baking soda bath is essential for the authentic pretzel crust. Seal edges tightly to prevent filling from leaking. Work in batches for the baking soda bath. Use room temperature cream cheese for easier mixing. Watch the oven closely as they bake quickly. These can be frozen after the baking soda bath and egg wash for up to 3 months.
