  • 1 cup candy corn
  • 1/2 cup dried cranberries

  • 1/2 cup packed light brown sugar
  • 2 tablespoons light corn syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda

Instructions

  1. Preheat your oven to 250°F. Line a large baking sheet with parchment paper.
  2. In a large mixing bowl, combine 9 cups Corn Chex cereal, 2 cups mini pretzels, and 1 cup pecans (if using). Toss gently to distribute.
  3. In a medium saucepan over medium heat, melt 1/2 cup unsalted butter. Add 1/2 cup packed brown sugar and 2 tablespoons corn syrup. Stir constantly until the mixture comes to a gentle boil (about 2-3 minutes). Let it boil for exactly 1 minute without stirring.
  4. Remove the saucepan from heat. Stir in 1 teaspoon vanilla extract, 1/2 teaspoon salt, and 1/4 teaspoon baking soda. The mixture will bubble up and lighten in color.
  5. Slowly drizzle the hot butter mixture over the cereal mixture while tossing with a wooden spoon or silicone spatula until evenly coated.
  6. Spread the coated cereal mixture onto the prepared baking sheet in an even layer. Bake for 45 minutes, stirring every 15 minutes.
  7. Remove from oven and let cool on the pan for 10 minutes. While still slightly warm, sprinkle 1 cup candy corn and 1/2 cup dried cranberries over the top. Toss gently to distribute.
  8. Let cool completely on the pan (about 30-40 minutes). Once cooled, break any large clusters into bite-sized pieces.

Don’t skip the corn syrup—it prevents sugar crystallization and gives a glossy coating. Stir every 15 minutes to ensure even baking. Let the mix cool completely before serving for the best crunchy texture. Store in an airtight container at room temperature for up to a week. To refresh stale mix, spread on a baking sheet and reheat at 300°F for 5 minutes.
