Ingredients

Scale
  • 1 ½ cups All-Purpose Flour
  • 1 cup Granulated Sugar
  • 2 tablespoons Unsweetened Cocoa Powder
  • 1 teaspoon Baking Soda
  • ½ teaspoon Salt
  • ½ cup Unsalted Butter, softened
  • 2 Large Eggs, room temperature
  • 1 teaspoon Vanilla Extract
  • 1 cup Buttermilk
  • 1–2 teaspoons Red Food Coloring (gel preferred)
  • 4 oz Cream Cheese, softened (for filling)
  • ½ cup Powdered Sugar (for filling)
  • ½ teaspoon Vanilla Extract (for filling)

Instructions

  1. Preheat oven to 350°F (175°C) and line a standard 12-cup muffin tin with cupcake liners.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set aside.
  3. In a large bowl, beat the softened butter and granulated sugar until light and fluffy (about 3-4 minutes).
  4. Beat in the eggs one at a time, mixing well after each addition, then add the vanilla extract. Scrape down the sides of the bowl.
  5. Alternate adding the dry ingredients and buttermilk to the butter mixture, starting and ending with the dry ingredients. Mix on low speed until just combined.
  6. Fold in the red food coloring gently until the batter is vibrant red and thick.
  7. In a small bowl, mix the softened cream cheese, powdered sugar, and ½ teaspoon vanilla until smooth. Chill in the fridge for 10 minutes to firm up.
  8. Spoon 1-2 tablespoons of batter into each liner. Pipe or spoon a small dollop of the cream cheese mixture into the center of the batter. Cover with another teaspoon of batter.
  9. Bake for 18-20 minutes, or until a toothpick inserted into the cake (avoiding the center) comes out clean.
  10. Let cupcakes cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Ensure butter and eggs are at room temperature to prevent curdling. Do not overmix the batter to avoid tough cupcakes. Chill the cream cheese mixture before piping to ensure it holds its shape during baking. If the batter is too thin, the bites may sink; aim for a thick batter consistency.
