A reliable, crowd-pleasing breakfast casserole featuring crispy shredded hash browns, savory sausage, and melted cheddar cheese. This make-ahead dish is perfect for busy mornings, brunches, or potlucks, offering a perfect balance of texture and flavor with minimal effort.

Ingredients

Scale
  • 1 pound raw breakfast sausage (pork preferred)
  • 30 ounces frozen shredded hash browns (thawed)
  • 1 medium yellow onion, finely diced
  • 2 cups sharp cheddar cheese, shredded
  • 6 large eggs
  • 1 cup whole milk
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and black pepper to taste
  • 2 tablespoons unsalted butter

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Heat a large skillet over medium-high heat and brown the raw breakfast sausage, breaking it apart with a wooden spoon. Cook for 8-10 minutes until fully cooked and slightly crispy. Drain excess grease, leaving about a tablespoon.
  3. In the same skillet, add butter and diced onions. Sauté in the sausage fat for 5 minutes until soft and translucent.
  4. Combine the cooked sausage and onions in a large bowl and let cool slightly.
  5. Add the thawed hash browns and 1 cup of shredded cheddar cheese to the sausage mixture. Toss to coat evenly.
  6. In a separate bowl, whisk together eggs, milk, Dijon mustard, garlic powder, onion powder, salt, and pepper until smooth.
  7. Pour the egg mixture over the potato mixture and stir gently to combine.
  8. Transfer the mixture to a greased 9×13 inch baking dish, spreading it evenly and pressing down lightly to remove air pockets.
  9. Sprinkle the remaining 1 cup of cheese over the top.
  10. Bake for 45-50 minutes until the top is golden brown and the center is set.
  11. Let the casserole rest for 10 minutes before cutting and serving.

Notes

Thaw hash browns before using to prevent sogginess. Sautéing onions with the sausage adds depth of flavor. Let the casserole rest for 10 minutes after baking to ensure clean slices. Can be assembled the night before and refrigerated; add 10-15 minutes to baking time if baking from cold.
