  • 1 ½ cups (190g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ cup (113g) unsalted butter, melted and cooled
  • ¾ cup (150g) granulated sugar
  • 2 large eggs, room temperature
  • ½ cup (120ml) sour cream
  • 1 teaspoon vanilla extract
  • Optional: ⅓ cup (40g) chopped walnuts or pecans
  • Optional: ½ cup (90g) chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your loaf pan with butter or line it with parchment paper for easy release.
  2. Mash the bananas in a medium bowl until mostly smooth but with a few small lumps remaining.
  3. In a large bowl, sift together the all-purpose flour, baking soda, salt, and ground cinnamon.
  4. In another bowl, whisk the melted butter, sugar, eggs, sour cream, and vanilla extract until smooth and creamy.
  5. Add the mashed bananas to the wet mixture and stir gently to combine.
  6. Gradually fold the dry ingredients into the wet batter using a spatula or wooden spoon. Stop as soon as the flour disappears to avoid overmixing.
  7. If using add-ins like nuts or chocolate chips, fold them in now.
  8. Pour the batter into the prepared loaf pan and smooth the top gently with a spatula. Optionally, sprinkle extra nuts on top.
  9. Bake for 55-65 minutes, starting to check at 55 minutes by inserting a toothpick into the center. It should come out mostly clean with a few moist crumbs but no wet batter.
  10. Let the bread cool in the pan for 10 minutes, then transfer to a cooling rack to cool completely.

Use overly ripe bananas for best flavor and sweetness. Do not overmix the batter to avoid tough bread. If the top browns too quickly, tent with foil halfway through baking. Let the bread cool completely before slicing to maintain crumb structure. Grease or line the pan well to prevent sticking.
