  • 1 (2.5 to 3-pound) whole chicken, butterflied (spatchcocked)
  • 4 tablespoons unsalted butter, softened
  • 3 cloves garlic, minced
  • 1 tablespoon fresh thyme leaves, plus 4 sprigs for the pan
  • 1 tablespoon fresh rosemary, finely chopped
  • 1 teaspoon lemon zest
  • 1 ½ teaspoons kosher salt, divided
  • ½ teaspoon freshly ground black pepper
  • 1 cup dry Champagne or sparkling wine
  • ½ cup chicken broth, low-sodium
  • 1 tablespoon all-purpose flour (optional, for thickening the sauce)
  • Fresh parsley, chopped, for garnish

Instructions

  1. Preheat your oven to 425°F (220°C). Position a rack in the center of the oven. Pat the chicken dry with paper towels.
  2. Butterfly the chicken if needed: Place chicken breast-side down, cut along both sides of the backbone to remove it, flip over, and press down on the breastbone to flatten.
  3. Make the herb butter: In a small bowl, combine softened butter, minced garlic, thyme leaves, chopped rosemary, lemon zest, 1 teaspoon salt, and black pepper. Mix well.
  4. Season the chicken: Gently loosen the skin over the breast and thighs, slide half the herb butter under the skin, and rub the remaining butter over the outside. Sprinkle with remaining ½ teaspoon salt.
  5. Sear the chicken (optional but recommended): Heat an oven-safe skillet over medium-high heat, add a drizzle of olive oil, place chicken skin-side down, and cook undisturbed for 4-5 minutes until golden brown.
  6. Add Champagne and aromatics: Flip chicken skin-side up. Pour Champagne and chicken broth into the skillet around the chicken. Add thyme sprigs to the liquid.
  7. Roast the chicken: Transfer skillet to the oven and roast for 35-40 minutes, until internal temperature reaches 160°F (71°C) in the breast and 175°F (80°C) in the thigh.
  8. Rest the chicken: Remove from oven, transfer chicken to a cutting board, tent with foil, and let rest for 10-15 minutes.
  9. Make the pan sauce: Place skillet over medium heat, bring pan juices to a simmer. If desired, whisk in flour and cook for 1 minute. Simmer for 3-4 minutes until reduced by half. Season with salt and pepper. Optionally stir in a tablespoon of cold butter.
  10. Carve and serve: Carve chicken into portions, spoon pan sauce over the top, garnish with fresh parsley, and serve immediately.

Notes

Dry the chicken thoroughly for crispy skin. Don’t skip the resting time. Use an instant-read thermometer for perfect doneness. Watch the Champagne level during roasting to prevent burning or steaming. Let butter come to room temperature for easy spreading. Season generously.
