Perfect Fancy Grilled Cheese with Brie and Fig Jam

A gourmet twist on the classic grilled cheese sandwich featuring creamy Brie and sweet fig jam on crusty artisan bread, perfect for a quick and indulgent snack or casual entertaining.

  • 4 slices artisan sourdough or crusty baguette
  • 6 ounces (170g) Brie cheese, rind on
  • 3 tablespoons fig jam or preserves
  • 2 tablespoons unsalted butter, softened
  • Optional: fresh thyme leaves (a pinch)
  • Optional: black pepper (a crack or two)

Instructions

  1. Slice the Brie into even pieces about 1/4-inch thick.
  2. Spread softened butter evenly on one side of each bread slice.
  3. Place two bread slices butter-side down on a clean surface.
  4. Spread about 1 1/2 tablespoons of fig jam evenly over each slice.
  5. Layer the Brie slices on top of the jam, distributing evenly but not overloading.
  6. Optionally, sprinkle a pinch of fresh thyme and a crack of black pepper.
  7. Top with the other bread slices, butter-side up.
  8. Warm a non-stick skillet or cast-iron pan over medium-low heat.
  9. Place the sandwiches in the skillet carefully.
  10. Cook for about 3-4 minutes on the first side until golden brown and crisp.
  11. Flip gently and cook the other side for another 3-4 minutes, pressing lightly with a spatula.
  12. Check inside by lifting the edge slightly; Brie should be soft and oozing, bread crisp and golden.
  13. If needed, lower heat and cook a little longer.
  14. Let the sandwich rest for a minute before slicing diagonally and serving warm.

Notes

Use medium-low heat to melt Brie gently without burning bread. Butter the bread generously for a golden crust. Let sandwich rest before slicing to prevent cheese from spilling. Avoid overloading with jam or cheese to keep sandwich neat. For vegan version, use dairy-free Brie and vegan fig jam with plant-based butter.
