  • 1 (8-ounce) wheel of brie cheese
  • ¼ cup pure maple syrup
  • 1 tablespoon unsalted butter, melted
  • 1 teaspoon pumpkin pie spice
  • Pinch of flaky sea salt
  • 8 ounces prosciutto or salami
  • 1 cup roasted pumpkin seeds (pepitas)
  • 1 cup toasted pecans or walnuts
  • 1 large apple, thinly sliced
  • 1 large pear, thinly sliced
  • 1 cup dried figs or dates
  • ½ cup honeycomb or extra maple syrup for drizzling
  • 1 cup assorted crackers or crostini
  • Fresh rosemary sprigs and edible flowers (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). While it heats, take the brie out of the fridge and unwrap it. Let it sit on the counter for about 10 minutes.
  2. Prepare the maple glaze: In a small bowl, whisk together the ¼ cup maple syrup, 1 tablespoon melted butter, and 1 teaspoon pumpkin pie spice.
  3. Score the top of the brie: Using a sharp knife, make shallow diagonal cuts across the top in a crosshatch pattern, about ¼ inch deep.
  4. Place the brie in a small oven-safe dish. Pour the maple glaze over the top, letting it pool around the sides. Sprinkle a pinch of flaky sea salt over the top. Bake for 10-12 minutes, until the brie is soft and puffed slightly.
  5. While the brie bakes, prepare the board: Arrange crackers and crostini in small clusters around the board, leaving a prominent spot for the warm brie dish.
  6. Add the meats: Fold or roll the prosciutto slices into loose ribbons and place them in small piles around the board.
  7. Add the fruit: Arrange apple and pear slices in overlapping fans or small stacks. Tuck dried figs or dates in between.
  8. Add the crunchy elements: Sprinkle roasted pumpkin seeds and toasted pecans in small clusters around the board.
  9. Place the warm brie: Once baked, carefully transfer the dish to the center of the board. Drizzle any remaining glaze over the top. If using honeycomb, place it next to the brie.
  10. Garnish and serve: Tuck fresh rosemary sprigs around the board. If using edible flowers, scatter them lightly. Serve immediately while the brie is warm and gooey.

Notes

Do not overbake the brie; it should be soft and puffed but still hold its shape. Toast nuts fresh for best flavor. Slice fruit just before serving to prevent browning. For a vegetarian version, omit prosciutto and add roasted vegetables.
