  • 2 slices sturdy sandwich bread (sourdough or white sandwich bread, thick slices preferred)
  • 1 tablespoon butter, softened (unsalted preferred)
  • 1 slice sharp cheddar cheese
  • 1 slice mozzarella cheese
  • Optional: pinch of garlic powder or dried herbs

Instructions

  1. Spread about 1/2 tablespoon of softened butter evenly on one side of each bread slice.
  2. Place one slice of bread, buttered side down, on a cutting board or plate.
  3. Layer the sharp cheddar slice first, then the mozzarella on top.
  4. Cap with the second bread slice, buttered side up.
  5. Place a non-stick skillet over medium-low heat and warm for about 1 minute.
  6. Gently place the sandwich in the skillet and press down lightly with a spatula.
  7. Cook for 2-3 minutes until the bread is golden brown and crispy.
  8. Flip the sandwich carefully and cook for another 2-3 minutes until the second side is golden and cheese is melted.
  9. Optional: Cover the pan briefly with a lid for 30 seconds to increase gooeyness.
  10. Remove from pan and let rest for 1 minute before slicing and serving.

Notes

Use medium-low heat to avoid burning the bread before the cheese melts. Press the sandwich gently while cooking for even melting. Covering the pan briefly helps melt cheese faster. For dairy-free, use vegan butter and plant-based cheese slices. Reheat leftovers in a skillet over low heat to maintain crispness.
