A fast, flavorful, and easy weeknight dinner that comes together in under 30 minutes using simple pantry ingredients in a single pot.

Ingredients

Scale
  • 1 pound ground beef or ground turkey
  • 1 medium yellow onion, diced
  • 1 red bell pepper, diced
  • 1 (1-ounce) packet taco seasoning
  • 1 (15-ounce) can black beans, rinsed and drained
  • 1 (14.5-ounce) can diced tomatoes, undrained
  • 1 (15-ounce) can whole kernel corn, drained
  • 1 (32-ounce) carton chicken broth (low-sodium)
  • 1 cup shredded cheddar or Mexican blend cheese
  • 1 avocado, sliced (for garnish)
  • Fresh cilantro leaves (for garnish)

Instructions

  1. Heat a large pot over medium-high heat. Add the ground beef or turkey and break it up with a wooden spoon. Brown the meat for about 5 minutes, then drain excess grease if desired.
  2. Add the diced onion and bell pepper to the pot with the meat. Sauté for 3 minutes until the onions are translucent and soft.
  3. Sprinkle the taco seasoning over the meat and vegetables. Stir well to coat and cook for 1 minute to toast the spices.
  4. Pour in the chicken broth, diced tomatoes (with juices), rinsed black beans, and corn. Stir to combine and scrape the bottom of the pot to release browned bits.
  5. Bring the soup to a boil, then reduce heat to low. Cover and simmer for 15 minutes to allow flavors to meld and vegetables to soften.
  6. Taste and adjust seasoning with salt and pepper if needed. Ladle into bowls and top with shredded cheese, avocado slices, and fresh cilantro. Serve immediately with tortilla chips.

Notes

For a vegetarian version, swap ground meat for extra beans or a plant-based substitute. To make it spicy, add diced jalapeños or cayenne pepper. If the soup is too thick, add more broth; if too thin, simmer uncovered longer. Use low-sodium broth to control salt levels.
