A quick and easy watermelon frosé slushie recipe perfect for pool parties, combining frozen watermelon, rosé wine, and lemon juice for a refreshing summer drink.

  • 4 cups watermelon, cubed and frozen (seedless preferred)
  • 1 cup rosé wine (250 ml), chilled
  • 2 tablespoons freshly squeezed lemon juice
  • 12 tablespoons sugar or simple syrup (optional, adjust to taste)
  • A small handful of mint leaves, for garnish
  • 1 cup ice cubes (optional)
  • 1/4 cup water (60 ml), only if needed to help blend

Instructions

  1. Cut fresh watermelon into 1-inch cubes, removing seeds. Spread in a single layer on a baking sheet and freeze for at least 4 hours or overnight.
  2. Place rosé wine bottle in the fridge for at least 2 hours before making the slushie.
  3. In a high-speed blender, combine 4 cups of frozen watermelon cubes, 1 cup chilled rosé, 2 tablespoons fresh lemon juice, and sugar or simple syrup if using. Add 1 cup ice cubes if desired for thicker texture.
  4. Blend on high for about 30-45 seconds until smooth but icy. If mixture is too thick or won’t blend, add up to 1/4 cup water to help.
  5. Check consistency and taste; adjust sweetness if needed by adding more syrup.
  6. Pour into glasses, garnish with fresh mint leaves and a small watermelon wedge if desired, and serve immediately.

Notes

Freeze watermelon cubes individually to avoid clumping for smooth blending. Use cold rosé wine for best flavor. Blend in short bursts to maintain icy texture. Adjust sweetness last as watermelon sweetness varies. Mint garnish releases subtle oils when lightly crushed. Store leftovers in freezer up to 2 days; thaw slightly and re-blend before serving.
