Refreshing Watermelon Mint Popsicles

These easy homemade watermelon mint popsicles are a quick, refreshing summer treat with a perfect balance of sweet watermelon and cooling mint.

Ingredients

  • 4 cups (600g) cubed seedless watermelon
  • 1012 fresh mint leaves, roughly chopped
  • 2 tablespoons fresh lime juice (about 1 lime)
  • 12 tablespoons honey or agave syrup (optional)
  • 1/4 cup (60ml) water

Instructions

  1. Cut seedless watermelon into cubes, about 4 cups (600g).
  2. Place watermelon cubes and fresh mint leaves into a blender or food processor. Add 1/4 cup (60ml) water.
  3. Pulse/blend until mostly smooth with a little texture, about 2-3 minutes.
  4. Add 2 tablespoons fresh lime juice and 1-2 tablespoons honey or agave syrup. Blend again for 20-30 seconds to combine.
  5. Optional: Strain mixture through a fine mesh strainer for extra smooth popsicles.
  6. Pour mixture evenly into popsicle molds, leaving about 1/4 inch space at the top.
  7. Insert sticks and freeze for at least 4-6 hours or overnight until solid.
  8. To unmold, run warm water over the outside of molds for 10-15 seconds and gently pull sticks out. Serve immediately.

Notes

Do not overblend to avoid watery texture. Adjust sweetener based on watermelon sweetness. For easier unmolding, use silicone molds and run warm water briefly. Variations include adding berries, using coconut water, or adding a spicy jalapeño kick.
