A low-effort, high-reward date night meal that requires zero cooking and minimal cleanup. This board is all about connecting over a beautiful spread of cheeses, meats, and accompaniments, perfectly portioned for two.

Ingredients

Scale
  • 4 oz Brie or Camembert
  • 4 oz Aged Gouda or Manchego
  • 2 oz Blue Cheese or Goat Cheese
  • 4 oz Prosciutto
  • 4 oz Genoa Salami or Soppressata
  • 2 oz Speck or Chorizo (optional)
  • 1/2 cup Fig Jam or Honey
  • 1/4 cup Olives (Castelvetrano or Kalamata)
  • 1/4 cup Cornichons or Pickled Onions
  • 1/4 cup Dried Apricots or Figs
  • 1/4 cup Toasted Almonds or Walnuts
  • 1 small Baguette or 810 Crackers
  • Fresh Grapes or Apple Slices
  • Fresh Rosemary or Thyme Sprigs

Instructions

  1. Take the cheeses out of the fridge 30 minutes before serving.
  2. Slice the baguette into thin rounds (about 1/4 inch thick). Optionally, brush with olive oil and toast in a 350°F oven for 5-7 minutes until golden.
  3. Arrange the cheeses first, placing them in different spots on the board. Slice the aged gouda into thin triangles or cubes. Leave the brie whole or cut a wedge. Crumble or leave the blue cheese in a small wedge.
  4. Add the meats next. Fold the prosciutto into loose ribbons or roll into small rosettes. Fan out the salami rounds in a line or stack them.
  5. Fill small ramekins with jam, honey, and olives. Place them in the gaps between the cheese and meat.
  6. Tuck in the accompaniments: scatter cornichons, dried fruit, and nuts in the remaining empty spaces.
  7. Add the fresh elements last: arrange baguette slices, grapes, and apple slices around the edges. Tuck rosemary or thyme sprigs into the cheese.
  8. Step back and assess. Fill any bare spots with extra nuts or crackers.
  9. Serve immediately. Place the board in the center of the table with two small plates and napkins.

Notes

Temperature is key: let cheese come to room temperature for best flavor. Don’t overcrowd the board; leave breathing room. Prep all ingredients before arranging. Quality over quantity: stick to 3 cheeses, 2 meats, and a handful of accompaniments.
