  • 1 cup milk (whole or 2%, 240ml)
  • 2 tablespoons butter (28g)
  • 2 tablespoons all-purpose flour (16g)
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • Salt to taste
  • 1/3 cup chopped fresh tomatoes (50g)
  • 1/2 cup shredded lettuce (15g)
  • Optional: sliced jalapeños or a drizzle of ketchup/mustard

Instructions

  1. Preheat oven to 425°F (220°C). Toss frozen fries with 2 tablespoons of olive oil, salt, and pepper. Spread evenly on a baking sheet in a single layer. Bake for 25-30 minutes, flipping halfway, until golden and crispy.
  2. While fries bake, crisp bacon in a pan over medium heat. Drain on paper towels, then crumble. In the same pan, add diced onions and cook until translucent, about 3-4 minutes. Add ground beef, season with salt, pepper, and garlic powder, cooking until browned and cooked through (about 7-8 minutes). Drain excess fat.
  3. In a medium saucepan, melt butter over medium heat. Whisk in flour and cook for 1-2 minutes until it forms a smooth roux without browning. Slowly whisk in milk, stirring constantly until thickened, about 4-5 minutes. Lower heat and stir in shredded cheddar and Velveeta until melted and smooth. Add chili powder, smoked paprika, and salt to taste. Keep warm on low.
  4. Once fries are done, transfer to a large serving platter or leave on the baking sheet. Spoon the warm queso sauce generously over the fries. Scatter cooked ground beef, crumbled bacon, sautéed onions, and diced pickles evenly on top.
  5. Finish with fresh chopped tomatoes and shredded lettuce. Add sliced jalapeños or a drizzle of ketchup and mustard if desired. Serve immediately for best texture and flavor.

Notes

For crispier fries, use an air fryer instead of the oven. If queso sauce thickens too much, stir in a splash of milk to loosen. To make gluten-free, substitute all-purpose flour with gluten-free flour or cornstarch. Vegetarian versions can replace bacon with smoked tempeh or mushrooms and ground beef with lentils or plant-based crumbles. Serve immediately to avoid soggy fries.
