These spooky olive eye deviled eggs are a fun, easy, and delicious Halloween appetizer that looks like creepy eyes staring back at you. They come together in under 20 minutes using simple pantry staples for a crowd-pleasing treat.

Ingredients

Scale
  • 6–8 large eggs, hard-boiled and cooled
  • 1/2 cup mayonnaise (Duke’s or Hellmann’s recommended)
  • 1 tablespoon Dijon mustard
  • 1 teaspoon apple cider vinegar
  • 1/4 teaspoon garlic powder
  • Salt and black pepper to taste
  • 6–8 slices black olives, pitted
  • Paprika for garnish
  • Chives or green onion, finely chopped (optional)

Instructions

  1. Place eggs in a single layer in a pot and cover with cold water by an inch. Bring to a rolling boil, then remove from heat, cover, and let sit for 12 minutes.
  2. Transfer eggs to an ice water bath and let cool for at least 10 minutes to stop cooking and ease peeling.
  3. Peel the cooled eggs and slice them in half lengthwise. Scoop out the yolks into a medium bowl.
  4. Mash the yolks with a fork until finely crumbled. Add mayonnaise, Dijon mustard, apple cider vinegar, garlic powder, salt, and pepper. Mix until smooth and creamy.
  5. Transfer the yolk mixture to a piping bag fitted with a star tip (or a ziplock bag with the corner cut off). Pipe the filling back into the egg white halves, creating a tall, swirled peak.
  6. Place one slice of black olive on top of each piped yolk to create the ‘eye’. Add a tiny dot of paprika or a small piece of olive for the pupil.
  7. Lightly sprinkle paprika over the eggs for garnish. Serve cold or refrigerate until ready to serve.

Notes

[‘Use older eggs as they peel easier than fresh ones.’, ‘Pat olive slices dry with a paper towel before placing on eggs to prevent sliding and sogginess.’, ‘Do not add olive slices until just before serving to prevent brine from leaking into the filling.’, ‘Do not freeze deviled eggs as the texture becomes rubbery.’, ‘For a spicy version, add cayenne pepper or hot sauce to the filling.’]
