A quick and easy tater tot casserole that combines crispy tater tots, savory ground beef, and melted cheese for a comforting family meal.

  • 1 lb ground beef (lean recommended)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (10.5 oz) condensed cream of mushroom soup (or cream of celery/chicken)
  • 1 cup sour cream
  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 bag (32 oz) frozen tater tots
  • Salt and pepper, to taste
  • Optional: dried thyme or parsley

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Brown the ground beef in a large skillet over medium-high heat for 7-8 minutes, breaking it apart until no longer pink. Drain excess fat if needed.
  3. Add chopped onion to the beef and cook for 3-4 minutes until softened. Add minced garlic and cook for another minute, being careful not to burn.
  4. In a mixing bowl, combine the condensed cream of mushroom soup and sour cream until smooth.
  5. Pour the soup mixture into the skillet with the beef and stir well to coat. Season with salt, pepper, and optional herbs.
  6. Transfer the beef and creamy mixture into a 9×13 inch baking dish, spreading evenly.
  7. Sprinkle shredded sharp cheddar and mozzarella cheese evenly over the beef mixture.
  8. Arrange frozen tater tots in a single layer over the cheese, covering the surface completely.
  9. Bake in the preheated oven for 35-40 minutes until tater tots are golden brown and crispy and cheese is bubbling.
  10. Let the casserole rest for 5 minutes before serving.

Notes

Do not thaw tater tots before baking to keep them crispy. Drain excess fat from beef to avoid sogginess. If tater tots brown too quickly, tent with foil for last 10 minutes. Leftovers keep well refrigerated for up to 3 days and reheat best in oven at 350°F for 15-20 minutes.
